Tsitsibira (Corfu Ginger Beer)

It shares its roots with Corfu's cricket: both arrived with the British garrison, and cricket is still played on the Spianada, the big square in the middle of Corfu Town.
Tsitsibira is a lightly fermented, fizzy ginger drink made from water, sugar, lemon and fresh ginger. It's cloudy, tangy-sweet, and mildly spicy, made by small local producers and served ice-cold in cafés across Corfu.
Why it's made this way: Corfu picked up this drink during British rule — the Ionian Islands were a British protectorate from 1815 to 1864, and ginger beer came ashore with the garrison.
