The dish takes its name from the small, fiery peppers in it, spetzakia, themselves named after the Italian word for spice, spezia.

Thick coins of smoky loukaniko sausage are simmered with green and red peppers, sometimes eggplant, in a thick tomato sauce until everything softens together. Served bubbling hot in a clay dish at taverna counters across the Pelion peninsula and Volos.

Why it's made this way: The dish grew out of Pelion's shepherd and farming villages, built from whatever sausage and peppers were on hand, and it remains one of the signature orders at Volos, the coastal city at the foot of Mount Pelion.
