Every Clean Monday, Tyrnavos holds a raucous carnival called Bourani, with folk customs recorded as far back as 1898, where tsipouro flows in the streets until dawn.
Tyrnavos-style tsipouro is distilled from local grape pomace in small stills scattered around town, unflavored and clear, served in short glasses alongside a rotating wave of small meze. Tyrnavos has led Thessaly's tsipouro production since large-scale vine growing took off there in the late 19th century.
Why it's made this way: After Thessaly joined the Greek state in 1881, Tyrnavos quickly became the region's top tsipouro-producing town, and the spirit is now inseparable from the town's Bourani carnival, a fertility festival with roots tracing back to ancient Dionysian ritual.
