Greenland's waters supply a large share of the world's cold-water shrimp, yet most of the catch is processed and shipped straight to European plates rather than sold locally.
Rejemad is an open-faced sandwich piled high with small, sweet, cold-water shrimp, a spoonful of mayonnaise, dill, and a wedge of lemon, on buttered rye or white bread. It's a fixture of the shared Greenlandic-Danish smørrebrød table, sold at kiosks and bakeries alongside the catch that keeps Greenland's largest export industry running.
Why it's made this way: Shrimp trawling has been Greenland's biggest single export for decades, so a sandwich piled with the same cold-water shrimp caught just offshore is as much a product of the local economy as it is of Danish colonial-era food culture.
