Jocotes en Miel

Unripe jocotes are so tart that vendors first soak them in an ash-water solution to mellow the astringency before simmering them in sugar.

Small tropical jocote fruits simmered whole in a cinnamon-spiked sugar syrup until soft, sold in plastic cups with the syrup spooned over. Street carts appear seasonally on Chiquimula's corners.

Why it's made this way: Chiquimula's hot, dry valley climate is ideal jocote country, and the fruit's harvest season shapes the local street-cart calendar.
