Longaniza de Chiquimula

Demand spikes so hard during Holy Week that some Chiquimula producers say they sell more longaniza that single week than the rest of the year combined.

Thin pork sausage seasoned with garlic and achiote, cured and grilled over charcoal until the casing blisters. Roadside stands along the highway through Chiquimula sell it by the yard, sliced into a bolillo roll.

Why it's made this way: Chiquimula's cattle-and-pork ranching economy and its position on the highway toward El Salvador and Honduras made it Guatemala's best-known longaniza-producing region.
