Garnachas

Vendors fry the little tortillas in oil that's reused all day specifically because it darkens and thickens, which cooks say gives garnachas their signature crunch.

Small fried corn tortillas topped with ground meat, shredded cabbage, tomato sauce, and dry cheese, sold three or four to an order on a paper plate. They're a fixture of Guatemala City's market stalls.

Why it's made this way: Guatemala City's dense central markets, like La Terminal and Mercado Central, turned garnachas into the capital's default quick bite.
