Despite the name, these share almost nothing with Mexican tacos — rolled tight, deep-fried rigid, and drenched in tomato sauce and crema, more like a fried enchilada.

Corn tortillas rolled around seasoned shredded beef or chicken, deep-fried until crisp, then topped with tomato sauce, cheese, and cabbage. Capital street carts stack them in trays, fried to order.

Why it's made this way: Guatemala City's street-cart vendors developed their own fried-taco style over decades, now specifically associated with the capital's market stalls.
