Cooks pound the boiled plantain in a wooden mortar for so long that the rhythmic motion echoes Garifuna drumming traditions themselves.
Mashed green and ripe plantains pounded into a smooth, sticky mound, served with fish simmered in a light coconut-milk broth. Small Livingston comedores serve it as their signature plate.
Why it's made this way: Hudut is a cornerstone Garifuna dish carried to Central America's coast by the Garinagu exiled from St. Vincent in 1797, and Livingston is one of the few places in Guatemala still making it this way.
