Coffee grown on Quetzaltenango's volcanic slopes above 1,500 meters is classified as "Strictly Hard Bean," a grade reserved for beans that mature slowly in the cold and develop extra density.

Strong, dark-roasted coffee brewed in cloth socks or simple filters and poured from thermoses at street corners and bus stops, sold in small cups already sweetened.

Why it's made this way: Quetzaltenango's department sits high in the volcanic western highlands, prime high-altitude arabica country, and street vendors here have sold their own roast for generations.
