A single champurrada can be nearly as wide as a saucer yet is rolled thin enough to shatter like a cracker — bakers judge a good batch by the crackle.

Large, flat, sugar-crusted cookies studded with sesame seeds, baked in wood-fired ovens and sold by the dozen wrapped in brown paper outside Xela's panaderías. They're eaten dunked whole into hot coffee or atol.

Why it's made this way: Quetzaltenango's cool highland coffee culture and its bakery tradition built a whole ritual around the cookie-and-coffee pairing the city is known for nationwide.
