Sololá's Friday market is one of the oldest continuously running Maya trade markets in the Americas, predating the Spanish conquest by centuries.
Small masa tamales filled with a smear of black bean paste, wrapped in corn husk and steamed. Kaqchikel and Tz'utujil women sell them from baskets around the market plaza.
Why it's made this way: Sololá's market has anchored daily eating for surrounding Maya highland towns since before colonization, and simple corn-and-bean tamales remain its everyday staple.
