The bread is toasted dry on a wide flat griddle with no oil or leavening at all, a technique traced directly to the Taino, Haiti's pre-Columbian inhabitants.

Grated bitter cassava is pressed to remove its toxic juice, sieved into flour, then toasted on a wide griddle into a thin, crisp round sold whole or folded around peanut butter or coconut.

Why it's made this way: Centre's border communities near Belladère keep strong cassava-growing traditions tied to Taino heritage, making kasav a daily roadside item unique to the region's farming pattern.
