Vendors traditionally sun-dry the seasoned beef strips on corrugated roofs before frying them to order, using the tin as a free drying rack.

Beef strips are marinated in sour orange, garlic, and scotch bonnet, then dried and pan-fried until dark and chewy, piled into paper cones with pikliz by street sellers.

Why it's made this way: Centre department's grasslands around Hinche and Cerca-la-Source form Haiti's cattle heartland, giving the region an outsized claim on the country's beef specialties.
