The chadèque, a giant Caribbean grapefruit relative, is nearly all rind, so cooks boil the thick peel through several changes of water just to leach out its bitterness before candying it.

Thick chadèque peel is soaked, boiled, then simmered in cane syrup with spices until glossy and translucent, sold in small paper twists by Jérémie's confectionery vendors.

Why it's made this way: Grand'Anse's citrus groves produce chadèque in quantity, and Jérémie's vendors turned the fruit's usually-discarded rind into one of the department's signature sweets.
