Cooks toss the whole tiny lake crayfish directly into the rice pot, shells and all, since they're too small to shell individually.

Rice is cooked down with small whole lake crayfish, pigeon peas, and coconut milk into a one-pot dish, ladled from big pots into takeout containers by roadside cooks in Miragoâne.

Why it's made this way: The dish repurposes Lake Miragoâne's smallest, unsellable crayfish into an everyday plate lunch, a distinctly Nippes way of stretching the lake's harvest.
