Much of the catch is tilapia, a fish introduced to Haiti's lakes only in the mid-20th century that has since become the lake's dominant commercial species.

Small whole fish from Lake Miragoâne are scaled, seasoned with sour orange and epis, and deep-fried whole until the skin crackles, sold with pikliz and fried plantain.

Why it's made this way: The lake's fishing communities built a fry-stand economy around their daily catch, making fried lake fish as central to Nippes' street food identity as conch is to the coast.
