Lake Miragoâne is one of the only freshwater lakes in Haiti substantial enough to support a commercial crayfish trade, so this dish barely exists outside this one department.
Freshwater crayfish pulled from Lake Miragoâne are boiled or sautéed in a garlicky, peppery sauce and sold by the cupful from stalls along the lakeshore in Miragoâne.
Why it's made this way: Nippes' Lake Miragoâne is Haiti's largest natural lake, and its crayfish fishery gives the department a street-food specialty no coastal or mountain region can match.
