Doukounou (Steamed Cornmeal Pudding)

It's steamed inside a folded banana leaf tied with string, the same wrapping technique used for Mexican tamales, arriving in the Caribbean independently through African and Taino traditions.

Sweetened cornmeal batter mixed with coconut milk and spices is wrapped in banana leaf and steamed into a dense, pudding-like parcel, carried warm in baskets by street vendors.

Why it's made this way: Doukounou is considered a signature product of Petit-Goâve's sweets tradition, sold alongside dous makòs and rarely made with the same care elsewhere in the country.
