Petit-Goâve's confectionery reputation is old enough that the town is nicknamed "la ville des confiseries" (the city of sweets), and the fudge is traditionally poured onto banana leaves to set instead of trays.
Milk, sugar, and vanilla are cooked down for hours into a soft, layered fudge, often striped pink and white, then cut into squares and wrapped by street confectioners for sale.
Why it's made this way: Petit-Goâve, in the Ouest department, has been Haiti's confectionery hub since colonial times, and dous makòs remains its most requested treat among Haitians at home and abroad.
