The dense, spiced biscuit is deliberately baked hard enough to survive weeks of shipping, historically making it a favorite care-package treat mailed to Haitians living abroad.

Cassava flour is mixed with coconut, anise, ginger, and sugar into a stiff dough, shaped into thick ovals, and baked until firm and fragrant, sold from baskets by street vendors around Jacmel.

Why it's made this way: Jacmel and the surrounding Sud-Est region are known for this dense spiced biscuit, tied closely to the area's coconut- and cassava-growing communities along the southern coast.
