It's named after a 19th-century novelist who ordered it so often at his favorite Balatonfüred restaurant that the kitchen just started naming the soup after him.

A thick bean soup loaded with smoked pork hock, root vegetables, and a swirl of soured cream, often finished with a splash of vinegar for sharpness, ladled out at market stalls and lakeside eateries around Lake Balaton.

Why it's made this way: The dish is tied to the writer Mór Jókai, a regular at a restaurant in the lakeside town of Balatonfüred in the 1890s, whose favorite order was reportedly renamed in his honor.
