Somlói Galuska

Somlói Galuska — street food from Dunántúl (Transdanubia), Hungary

It's named after a small volcanic wine hill in Transdanubia, even though the dessert itself was popularized decades later by a Budapest restaurant kitchen.

A trifle-style dessert of sponge cake crumbled into layers with walnuts, raisins, rum syrup, chocolate sauce, and whipped cream, scooped into cups and sold at bakeries and dessert stalls across Transdanubia.

Why it's made this way: The name honors the Somló wine region's volcanic hills in western Hungary, tying a now-nationwide dessert back to the Transdanubian countryside it's named for.
