Grilled the traditional way, the sausage is scored with diagonal cuts so it curls open into little linked coins as it cooks — which is exactly how market vendors serve it, fanned out on the plate.

A reddish-orange, paprika-seasoned pork sausage sold in linked pairs, grilled or boiled and served with mustard and bread from market grills and festival stalls throughout Debrecen and the surrounding Hajdúság plain.

Why it's made this way: It grew out of Debrecen's centuries-old butchering trade, with paprika becoming a defining ingredient from the mid-19th century on; it's now officially recognized as a 'Hungaricum,' a designation for foods considered part of the national heritage.
