The red version is mixed with fresh raw animal blood, one of the few Indonesian dishes to use blood as a core ingredient, and Balinese tradition links its colors to the gods of the cardinal directions: red to Brahma, white to Iswara, black to Wisnu.

Minced meat, vegetables, and grated coconut are tossed with the Balinese spice base genep and sometimes fresh blood, creating a rich, textured mix eaten as a side to rice and grilled meat. It's prepared for temple festivals and family ceremonies as much as for everyday warung meals.

Why it's made this way: Lawar is believed to date back to ancient Bali and remains central to communal cooking for temple anniversaries (odalan) and rituals like the tooth-filing ceremony (metatah).
