Its name literally describes the cooking method — 'tipat' is Balinese for ketupat rice cake, and 'cantok' means to grind ingredients with a mortar and pestle, so the dish's name is really just an instruction for how to make it.

Sliced ketupat rice cake is layered with blanched long beans, bean sprouts, water spinach, and tofu, then covered in a peanut sauce ground with a touch of shrimp paste, kencur, and lime. Market stalls across Bali pound the sauce fresh in a stone mortar for each order and finish it with fried shallots and sweet soy sauce.

Why it's made this way: Tipat cantok is Bali's answer to Java's gado-gado and pecel, built around ketupat instead of plain rice, and it remains a common everyday market breakfast rather than a ceremonial dish, distinguishing it from Bali's more ritual-bound specialties like lawar and babi guling.
