The name 'Soto Betawi' didn't exist until the late 1970s — it was coined by a Chinese-Indonesian vendor named Lie Boen Po, who sold his soup at Jakarta's old Prinsen Park (today's Lokasari), even though similar soups had been sold in the city for decades before.
Beef and offal are simmered in a broth enriched with coconut milk and sometimes evaporated milk, spiced with cloves, nutmeg, and ginger, then ladled over chunks of potato and tomato with a squeeze of lime. Jakarta warungs keep the milky broth at a low simmer, skimming the rendered fat that pools on top.
