It's the one major Indonesian peanut-sauce salad that skips cooking entirely — every vegetable in the bowl, from cucumber to Thai basil, goes in completely raw.

Raw cucumber, bean sprouts, cabbage, long beans, and Thai basil are tossed in a spiced peanut dressing, all served cold and crunchy. Street-side warung vendors pound the peanut sauce to order in a stone mortar right at the stall.

Why it's made this way: Karedok reflects the Sundanese habit of eating lalapan — raw vegetables — setting it apart from Central Java's lotek and the national gado-gado, both of which use blanched vegetables.
