Rujak Cingur

'Cingur' literally means 'mouth' or 'snout' in Javanese — the dish mixes fresh and boiled fruit with vegetables, tofu, and tempeh, then adds boiled cow snout, all bound together in a thick, black shrimp-paste dressing.

Sliced mango, cucumber, bean sprouts, tofu, tempeh, and boiled cow snout are tossed in a dressing of ground roasted peanuts, black shrimp paste (petis), chili, and palm sugar, topped with a shattering handful of shrimp crackers. Surabaya's market stalls pound the dressing fresh in a stone mortar for each order.

Why it's made this way: The dish has existed in Surabaya since at least the Dutch colonial period, and in 2021 the Ministry of Education and Culture named rujak cingur an official Indonesian intangible cultural heritage.
