Soto Banjar

Unlike most Javanese sotos, Soto Banjar's broth is scented with sweet spices — cinnamon, cloves and nutmeg — and it is often served with ketupat instead of plain rice.

Shredded chicken sits in a clear broth perfumed with nutmeg, cloves, and cinnamon, ladled over rice vermicelli or perkedel (potato fritters), boiled egg, and a squeeze of lime. Banjarmasin warungs and floating-market boats alike serve it steaming hot from early morning.

Why it's made this way: Soto Banjar's warm spicing reflects Banjarmasin's long history as a trading port on routes that brought cloves, nutmeg and cinnamon, and it remains South Kalimantan's most recognized dish nationwide.
