It is seasoned with tauco, a fermented soybean paste of Chinese origin — a trace of the Chinese traders who worked Makassar's spice-trade port for centuries.

Beef and beef offal are simmered for hours in a peanut- and spice-thickened broth, seasoned with fermented soybean paste, then served with pressed rice cake (ketupat) and a squeeze of lime. Makassar's street stalls keep the pot simmering over low charcoal heat all day.

Why it's made this way: Coto Makassar is said to have begun as court food in the Gowa Kingdom, using every part of the animal including offal, and it remains South Sulawesi's most iconic soup.
