'Ijo' is an informal word for 'green', so the name simply means iced green banana — the colour comes from pandan or suji leaf in the dough, not the fruit.

A ripe banana is wrapped in a soft green rice-flour dough, sliced, and served over shaved ice with sweet coconut milk porridge, a bright red syrup, and condensed milk. Makassar street vendors sell it year-round, and it's a staple of Ramadan iftar stalls.

Why it's made this way: It is one of Makassar's best-known desserts and among South Sulawesi's most recognizable street sweets, especially at Ramadan stalls.
