The classic bowl has no meat at all — just rice, corn, pumpkin and greens — with salted fish and sambal roa, made from smoked garfish, served on the side.

Rice is simmered into a soft porridge with corn, cassava, pumpkin, spinach, and other greens, then topped with fried shallots and a side of spicy sambal and salted fish. Manado's street stalls serve it hot every morning as the city's default breakfast.

Why it's made this way: Manado has adopted tinutuan as a city icon, and Jalan Wakeke is lined with stalls devoted to it.
