The dish stacks three different trade-route legacies on one plate: Chinese noodles, an Indian-style curry base, and Arab-influenced spicing — a direct edible record of Aceh's centuries as a spice-trade crossroads.

Thick yellow noodles are stir-fried or stewed in a heavily spiced curry sauce with beef, goat, or seafood, then topped with fried shallots, a wedge of lime, and crunchy emping crackers. Street stalls fire it in a wok over roaring flames right at the counter.

Why it's made this way: Aceh's centuries-long role as a Sultanate-era trading hub connecting the Middle East, India, and China left its noodle dish with an unusually layered set of culinary influences that no other Indonesian noodle carries in quite the same way.
