Doogh

It's savory and lightly fizzy, not sweet — a fermented yogurt drink built to be sipped alongside kebabs, not dessert.

Doogh is made by whisking yogurt with water, salt, and dried mint, sometimes left to ferment slightly for natural carbonation. It's a near-constant presence at Iranian meals, sold bottled in shops and poured fresh at kebab houses and street food stalls.

Why it's made this way: Considered Iran's de facto national drink, doogh is prized both for its cooling effect in the country's hot, dry climate and for the way it cuts through rich grilled meat.
