Whole eggs are cracked straight into the simmering pot and poached right inside the stew, rather than fried separately and added on top.

Fava beans are simmered with a generous amount of fresh dill, garlic, turmeric, and a pinch of saffron, with eggs poached directly into the pot toward the end of cooking. It's ladled over plain rice (kateh) and served at Rasht's bazaar eateries and family tables alike.

Why it's made this way: Gilan's humid Caspian lowlands are ideal for growing dill and fava beans in abundance, and stews built around the two are one of the clearest markers of the province's herb-heavy, lightly spiced cooking style.
