The stuffing leans on walnut and pomegranate molasses rather than the rice fillings common elsewhere in Persian cooking — a pairing shared more with Caucasus cuisine than with central Iran.

A whole fish — often kutum, a Caspian Sea specialty — is stuffed with a paste of ground walnuts, fried onion, garlic, and pomegranate molasses, then baked or grilled whole. Fish stalls along Gilan's Caspian coast sell it whole, bones and all, wrapped for takeaway.

Why it's made this way: The dish draws on Gilan's easy access to Caspian Sea fish and the province's taste for walnut-and-pomegranate combinations, a flavor profile it shares with neighboring Azerbaijani and Caucasus cooking traditions.
