The same walnut-and-sour stuffing turns up across the border in Azerbaijan's Lankaran region, where lavangi is made with chicken as well as fish.

A whole fish — often kutum, a Caspian Sea specialty — is stuffed with a paste of ground walnuts, fried onion, garlic, and pomegranate molasses or sour plum paste, then baked or grilled whole. It's a home and restaurant dish along Gilan's Caspian coast, especially in the Talysh area.

Why it's made this way: The dish draws on Gilan's easy access to Caspian Sea fish and the province's taste for walnut-and-pomegranate combinations, a flavor profile it shares with neighboring Azerbaijani and Caucasus cooking traditions.
