Its name traces back to the same Middle Persian root, 'sanbosag,' that spread east to become India's samosa and west to become the Arab world's sambousek — making this Khuzestani street snack a distant cousin of both.

A thin dough is filled with spiced minced meat, potato, or lentils, folded into a triangle or crescent, and deep-fried until crisp and golden. Street stalls across Ahvaz and Abadan sell them fresh alongside falafel as an equally popular grab-and-go snack.

Why it's made this way: Khuzestan's Arab-influenced food culture, shaped by its position along the Persian Gulf and its ethnic Arab population, kept this fried-pastry tradition alive as an everyday street snack distinct from central Iran's foods.
