These mutton pies are still handed out at Puck Fair, one of Ireland's oldest gatherings, where a wild goat is crowned king of the town for three days.
Diced mutton is stewed with onion and seasoning, then sealed inside a sturdy pastry case and baked until firm enough to hold in one hand. Stalls at County Kerry's fairs and markets, especially Killorglin's Puck Fair, sell them hot for fairgoers to eat while walking the stalls.
Why it's made this way: They developed as portable fair food for farmers and traders who traveled to sell livestock and needed something hearty to eat without sitting down.
