The Waterford blaa has European protected-status recognition, putting this soft, floury roll in the same legal category as Champagne or Parma ham.

A soft white roll, heavily dusted in flour with almost no crust, is baked fresh each morning and split for sandwiches — traditionally packed with sausages, rashers, or just butter. Waterford's bakeries and market stalls sell them warm, often selling out by mid-morning.

Why it's made this way: It's believed to descend from bread-making traditions brought by Huguenot settlers in Waterford city, and it's stayed a proudly local specialty found almost nowhere else in Ireland.
