In parts of Ulster it was once traditional to leave a bowl of champ out on Halloween night as an offering, spoon standing upright in the middle.

Potatoes are boiled and mashed with milk and a generous handful of chopped scallions (spring onions), then piled into a bowl with a well of melting butter in the centre. Market cafes and stalls across Donegal and the Ulster counties serve it as a simple, filling side or light meal.

Why it's made this way: It's an old farmhouse dish built around potatoes and whatever green onions were growing nearby, and it stuck around as a comforting regional staple.
