Hummus fanatics travel from far outside Acre just for this one counter, expecting long lines and a chaotic scene — and the secret recipe is generous enough that a refill comes with a smile if you're not satisfied.

Warm, silky chickpea puree is ladled into a shallow bowl and topped with a generous pour of olive oil, whole chickpeas, and a scatter of parsley, served with fresh-baked pita for scooping. In Acre's Old City market, one legendary counter has served it this way for more than three decades.

Why it's made this way: A single family-run stand in the Old City market has been making hummus for more than 35 years, building a reputation that turned Acre into a pilgrimage stop for hummus fans from across Israel.
