Vin Santo grapes aren't pressed at harvest — they're hung to dry on straw mats or rafters in attics for months, sometimes concentrating their sugars for so long that a single bottle can take four years or more to finish fermenting and aging.

Vin Santo is an amber, honeyed Tuscan dessert wine made from Trebbiano and Malvasia grapes dried before pressing, then aged in small sealed barrels called caratelli. It's traditionally poured in small glasses for dipping crisp almond cantucci biscuits at the end of a meal.

Why it's made this way: The drying-loft technique and caratelli aging are rooted in Tuscan farmhouse tradition, and Vin Santo remains the region's classic finish to a meal, from Chianti's hill towns to Siena's countryside.
