Nyama Choma

The name is literally just Swahili for 'roasted meat' — and Kenyans built an entire social tradition around it.

Chunks of goat or beef grilled slowly over wood or charcoal until smoky and charred, then chopped and served on a wooden board with kachumbari and ugali. It's sold everywhere from roadside stalls to dedicated 'nyama choma' joints.

Why it's made this way: Grilling over open wood and charcoal is considered essential to the dish's flavor, and eating it is deeply social in Kenya.
