Making a single batch of this paper-thin snack takes hours of washing, pounding and sun-drying — and it can only be harvested during Laos's dry season, when the Mekong drops low enough to expose the riverbed algae underneath.
Green river algae is harvested from the Mekong's exposed riverbed between November and April, then washed, pounded, and pressed into thin sheets topped with sesame seeds, garlic, and tomato before hours of sun-drying on wooden frames. Vendors flash-fry the brittle sheets to order into a crisp, nori-like snack.
