Romazava (Beef & Greens Stew)

Traditional romazava includes anamalao greens, prized for a mild numbing effect on the tongue.

Beef is simmered with a mix of leafy greens such as anamalao, anantsonga or brèdes mafana, tomato, onion, garlic and ginger, then ladled over rice with a spoon of chili sakay on the side.

Why it's made this way: Widely called Madagascar's national dish, romazava blends the rice-and-greens cooking brought by early Austronesian settlers with the zebu-herding traditions carried in by East African migrants roughly a thousand years ago.
