Cheese is a rarity across most of Madagascar's rice-and-fish diet, which makes the Betsileo highlands, with their cattle pasture and cooler climate, one of the few parts of the country with its own home-grown cheese tradition.

Small dairies and farms around Fianarantsoa, including those near the village of Ivoamba, turn local cow's milk into simple farmstead cheeses, sold at highland markets alongside the region's rice, vegetables and potatoes.

Why it's made this way: The Betsileo are known as Madagascar's most accomplished farmers, and their mixed rice-and-livestock economy is what makes dairy cheese-making possible here, in a country where it's otherwise uncommon.
