'Bandung' has nothing to do with the Indonesian city — here it means 'mixed', describing the blend of ingredients in the gravy.

Yellow noodles and egg are smothered in a thick, spicy gravy built from dried shrimp, chilli, and shrimp paste, then loaded with prawns, meat, fish cake, and vegetables. Muar's market stalls have served it since the 1930s, and it remains the town's signature noodle dish.

Why it's made this way: It was created in Muar, Johor around 1930 and gave the town its reputation for the definitive version of the dish, distinct from milder mee bandung served elsewhere.
