The meat is seasoned with nothing more than salt, yet hours of slow wood-smoking alone give it enough flavor that stalls across Sabah's highlands sell it as a specialty in its own right.

Wild boar meat is hung and smoked for hours over indirect wood and charcoal fire until deeply cured, then grilled over direct heat to order. Roadside stalls and markets in Sabah's interior towns like Ranau, Tambunan, and Kota Belud are the places to find it.

Why it's made this way: It comes from the traditional smoking practices of Sabah's Kadazan, Dusun, Murut, and Rungus communities, who used wood smoke to preserve wild-hunted boar meat, and it remains a marker of Sabah's interior highland food culture distinct from its coastal dishes.
